Chorizo Beef Burger & Mango Margarita

This burger has disappointed, No One! You have never had a burger like this and neither have your friends or family. Get ready to rock their world. Here’s a tip, Prep topping and spread couple hours before is a time saver. Grilled Jalapenos are optional but I totally recommend them if you can handle it 🙂

Thank goodness for frozen mango chunks in the freezer section of the super market because now we can enjoy this deliciousness any time of the year. Can you think of a bad time of the year to have a Margarita? Me either. Trust me on the cinnamon, I know it seems unconventional to be adding cinnamon to your margarita but the earthy warm notes of this spice is the perfect balance to all the sweet mangoes and citrus juice.

Chorizo Beef Burger

Ingredients
  

Topping

  • 1/2 cup fresh feta
  • 1/2 cup tomato seeded and diced
  • 1/2 cup hot house cucumber diced
  • 1/4 fresh lemon juice
  • 2 tbsp. extra virgin olive oil
  • ½ tsp. kosher salt
  • ¼ tsp. ground pepper

Avocado Cream

  • 1/2 cup sour cream
  • 2 whole ripe avocados peeled & seeded
  • 1 jalapeño chopped
  • 1 tsp. fresh mint
  • 2 tbsp. extra virgin olive oil
  • 3 tbsp. fresh lime juice
  • 2 garlic cloves chopped
  • 1 tsp. kosher salt
  • ½ tsp. ground pepper

Grilled Jalapenos

  • 4 jalapeños fresh whole
  • 1 tsp. extra virgin olive oil
  • 1 tsp. fresh lime juice
  • ½ tsp. kosher salt
  • ¼ tsp. ground pepper

Patties

  • 3/4 lbs. ground beef 90/10
  • 3/4 lbs. chorizo

Instructions
 

  • Topping- Place all ingredients in a medium size bowl, stir to combine and set aside.
  • Avocado Cream- Place all ingredients in blender and blend until smooth, set aside.
  • Grilled Jalapenos- On a sheet of aluminum foil place jalapenos, drizzle with oil, wrap them tight and place on preheated grill, grill about 8mins. When done open carefully, sprinkle pinch of salt & pepper, add lime juice and set aside.
  • Patties- In medium bowl combine the two meats with a pinch of salt & pepper, without over working the meat with your hands, make 4 patties. Place patties on preheated grill, about 4 minutes per side or until your preferred doneness. Set grilled patties aside and cover with aluminum to keep warm.
  • Meanwhile slice buns open and place them on grill to toast, just a couple of minutes is all they need.
  • Spread the avocado cream on both sides of bun, top with meat, 2 tbsp. of feta cucumber topping, a little lettuce, add top bun and enjoy. Serve with grilled jalapenos!

Mango Margarita

Ingredients
  

  • 2 cups frozen mango chopped partially thawed
  • 3/4 fresh lime juice
  • 1 cup fresh orange juice
  • 1/4 cup agave nectar
  • 1/4 tsp. cinnamon
  • 3/4 cup tequila silver

Instructions
 

  • Place all ingredients in blend, blend high. Serve in glass over ice. So YUM!!!
